Since 1999, Charles Pacaud has farmed and made wine at Domaine La Croix Chaptal. The estate preserves local varieties such as Aramon, Clairette Rose and Clairette Blanche; it harvests by hand, uses indigenous yeasts and ages its cuvées for at least two winters.
