In Baslieux-sous-Châtillon, in the Marne Valley, Franck and Isabelle Pascal run a family estate of around seven hectares spread across 44 plots. Meunier, Pinot Noir and Chardonnay are grown using organic and biodynamic practices. Native-yeast fermentations and ageing on fine lees support the estate’s focus on expressing its terroirs, with champagnes that often have low or no dosage.
